Rhubarb + Toasted Almond Sourdough

Hard flour, whole wheat flour, salt, water, sourdough starter (flour, water, natural sourdough cultures), rhubarb cheong (rhubarb, sugar), toasted almond flour.

Cheong translates to ‘preserved with sugar’. It is a traditional Korean technique used to produce a concentrated syrup from fruit and sugar, allowing it to ferment and create a lovely sweetened syrup, full of flavour, and an excellent alternative to honey or other artificial sweeteners.
This loaf features Fresh rhubarb from local Thiessen Farms, located in Jordan Station.  The toasted almond flour wonderfully compliments the tart rhubarb and full-bodied fruit Cheong
